Creative dishes with a regional twist

In the cosy dining rooms, we’ll surprise you every evening with a new selection of dishes – with no menu needed, as we’ll discuss the seasonal selection on offer with you at your table. Only the best ingredients from regional producers find their way into Gosia’s kitchen. The high quality of the creative dishes with a twist is our top priority.

Culinary experiences at the Schlüssel

If there’s an ingredient you don’t like, or you have any intolerances, that's no problem at all. Gosia's fresh cooking provides plenty of scope for catering to you and your individual needs. The three-course evening menu will cost you CHF 86. And if you fancy, you can supplement this with a selection of cheeses and regional specialities or a homemade dessert. You determine the number of courses individually according to your appetite.

Wine cellar with a European touch

Our wine cellar is also inspired by our surroundings: We serve only European wines, 150 of which are from Switzerland. Let hostess Conny recommend a fine wine to accompany your courses.

Regional products

Our producers

Patrizia Käslin – Hof Kallenbach

Vegetables and fruit fresh from the field onto your plate! Twice a week, Patrizia Käslin brings several boxes of freshly harvested vegetables and fruit from her Kallenbach farm, less than 400 metres away from the Schlüssel as the crow flies. This arrangement enables Gosia to constantly adapt her menus depending on what is available.

Chäs Käslin – Cheese distribution

Heidi Käslin runs her small cheese shop with a great deal of passion. Her selection of regional cheese specialities can be found on the cheese trolley and the breakfast buffet at the Schlüssel. Our guests love to try the cheeses at the farm shop and take a selection of specialities home with them.

Seehuisli – Fishing

The family-run fishery in Ennetbürgen supplies the Schlüssel with freshly caught delicacies from Lake Lucerne. «We serve what the lake has to offer» – our menu incorporates seasonal specialities as available.

Kobi Truttmann – Dexter breed

Our long-standing cooperation with the Truttmann family from the Mythen farm in Seelisberg has proven well worthwhile. We regularly source meat from the Dexter cattle known for its fine texture, one of Gosia’s favourite products thanks to its special aroma and high quality.

Keimling Bier – local beer

A brewery that offers just a little bit more – a diverse team of craftsmen, pharmacists, biologists and other personalities from the region has been running its own brewery in Dallenwil since 2014. In addition to beer made from natural, regional raw materials, the team produces high-quality cosmetics using their own herbs from the by-products, while also cultivating permaculture gardens.  At the Schlüssl you’ll be able to enjoy the fruits of their labour in a beer glass, at the Spezerei and also in the «men's bath bag» put together especially for men.

Lisa Ambauen – Natural soap

Lisa Ambauen is passionate about making natural soap alongside her work on her own organic Ruotzen farm. Her own herb garden provides her with the raw materials she needs, and she creates a range of different handmade soaps with a great deal of love and care. Good for the senses, and for the skin.

Diana Gisler – Meat, tea & jam

Our small farm is located just above the Boutique- Hotel Schlüssel. Fallow deer have been kept here since 2006. Their meat is very tender, low in fat and has a high protein content. In addition to selling fallow deer meat, we also produce seasonal regional products such as: jams, dried fruit, smoked meat, etc. Some of the initial products are available in the Spezerei in the Boutique-Hotel.

Dani & Gabrielle Aschwanden – Meientaler Gin

«What’s life without gin?» Exclusive enjoyment from Meiental: Gabrielle and Daniel Aschwanden, previously the long-standing hosts of the Boutique-Hotel Schlüssel, use numerous natural treasures such as juniper and wild herbs from the Meiental to produce their special gin. The limited number of bottles makes this aromatic gin a special pleasure. Available as part of our large gin range for a gin and tonic after a meal, or as a souvenir in a 50 cl bottle to take home.
